Date Filling for Hamentaschen

"I can't always find date filling at the market. So I am posting this in case I ever need a recipe for it. Recipe from food down under. Filling should be refrigerated, and you may freeze it as well."

  • Pulse dates, raisins, rind and cinnamon in a food processor until minced finely.
  • Add nuts and pulse 1-2 times.

  1. This is totally delicious!! Not only are the dates, golden raisins, and walnuts great together--the little bit of lemon rind and cinnamon adds a kind of old world quality that's just wonderful! I scaled the recipe down to 1/2 cup and minced everything by hand (since I don't have a food processor); then used it as the date filling for 24 cookies of Recipe #100557 (which I've also reviewed). Perfect!! This recipe is most definitely a keeper! Thanks for posting it, Sue L!!
