This makes a huge batch, cut the recipe in half if desired. These cookies are best if they sit for a couple of days to soften. They freeze well also. From Company's Coming Cookie cookbook.
- 473.18 ml butter or 473.18 ml margarine, softened
- 473.18 ml brown sugar, packed
- 236.59 ml milk
- 946.36 ml all-purpose flour
- 946.36 ml rolled oats
- 24.64 ml baking powder
- 4.92 ml salt
- 226.79 g chopped dates
- 78.07 ml granulated sugar
- 158.51 ml water
- Cream butter and sugar together well.
- Slowly mix in milk.
- Add remaining ingredients.
- Mix well.
- Chill for 1 hour.
- Roll out fairly thin on lightly floured board.
- Cut into 2 1/2-inch rounds.
- Place on ungreased baking sheets.
- Bake in 350°F oven for 8-10 minutes.
- Fill with Date Filling, to form a sandwich.
- For date filling: combine dates, sugar and water in saucepan.
- Bring to a boil.
- Simmer, stirring often, until mushy and thickened.
- Add more water if too dry, or simmer longer if too runny.
- Cool and spread between cookies.
I make a cylindrical roll from the chilled dough, roll in waxed paper, and slice to bake. It makes better cookies, less dry, and saves a lot of time and mess. Family favorite.
great recipe... I don't add the sugar to the date mixture, as dates are so sugary to start (and it's still plenty sweet). easy to make, though very time consuming - still worth it!
These were very tasty, but it was a fair amount of work.
