Date & Fig Salad Dressing

- 4 figs, chopped
- 4 dates, chopped
- 1⁄4 cup golden raisin
- 2 large softened garlic cloves
- 1 cup extra virgin olive oil
- 1⁄8 balsamic vinegar
- 1 dash koshar salt
- ground pepper
directions
- Slightly roast or soften garlic first, otherwise too bitter.
- Whirl all the ingredients using a hand held electric blender; mine is a Cuisinart 200 watts Smart Stick that comes with a cup for the ingredients.
- Very thick; experiment with different vinegars (red wine is also good).

I love this fruity dressing. It is thick, more like jam consistency, as the recipe indicates. I had to add way more balsamico to make it useable on salad and to give it that tang a dressing requires. But after that, most delicious on all kinds of salads or even just plain salad or rucola leaves! Next time I will just use less dates, figs and currants, like half of the amount and then add balsamico as I go.
