  • Slightly roast or soften garlic first, otherwise too bitter.
  • Whirl all the ingredients using a hand held electric blender; mine is a Cuisinart 200 watts Smart Stick that comes with a cup for the ingredients.
  • Very thick; experiment with different vinegars (red wine is also good).

  1. I love this fruity dressing. It is thick, more like jam consistency, as the recipe indicates. I had to add way more balsamico to make it useable on salad and to give it that tang a dressing requires. But after that, most delicious on all kinds of salads or even just plain salad or rucola leaves! Next time I will just use less dates, figs and currants, like half of the amount and then add balsamico as I go.
