Danks Red Beans and Rice

"So this recipe I a hybrid of a couple different recipes I looked at after one of the guys at work brought in some smoked alligator sausage he got on the black market or wherever you get gator sausage from I don't ask questions I just excepted the challenge and started sharpening my knife."

  • First thing first chop up all your chopables. This being the sausage, onion, green pepper, and celery.
  • Heat some oil 1 or 2 tablespoons depending on how health conscious you are in a pan over medium high heat. when the oil is nice and hot add the sausage and brown just enough to get some good color and let some of those juices out.
  • Reduce the heat to lets say medium low and add the veggies and cook until soft about 2 minutes.
  • Now add 1 tablespoon of the creole seasoning and stir until you can smell the spices get nice and fragrant this takes about a minute.
  • Deglaze the pan with the chicken or beef stock which every you decided to go with make sure to get all those good flavors off the pan it would be a shame to waist them.
  • Now you have yourself a critical decision to make that I should have told you about earlier and didn't but that's no big deal because you read the whole recipe before you start cooking it. Or do you? If you want to make this in a crockpot now would be the time to transfer the mixture to the crockpot or you could use a Dutch oven in that case you should have done the last 5 steps in the Dutch over unless you don't own a Dutch oven which in that case shame on you and I guess it is time to transfer to the crockpot unless you don't own one of them either then just use a regular pot. It doesn't really mater.
  • After you have chosen you cooking vessel of choice time to add the beans, tomatoes, hot sauce and more creole seasoning I used another full tablespoon but you can add as much or as little as you would like and if you are one of those people I guess the hot sauce is optional hey just blame the kids they have hot stuff no one will know your secret is safe with me just remember not to mention it in your comment below then the whole world will know what you did.
  • Now the hard part waiting till it's done if you use the crockpot this should take 2 to 3 hours on high or 5 to 6 hours on low. In the Dutch oven or regular pot half to a full hour depending on how liberal you are with the heat.
  • When the beans are close to being done cook the rice I'm a 2 parts water to 1 part rice guy myself but fell free to use the directions the came with the rice if that's your thing.
  • One last booby trap for you if you decided to be hard core and use a pound of dried beans first of all good for you and second of all don't forget to rinse them and soak them overnight or who knows how long this will take to cook but you already knew that because you're hard core.
