Excellent side dish that compliments the stuffed pork tenderloin perfectly. Easy to make as well. Adapted from Scandinavian website
- 3 lbs red cabbage
- 1⁄2 cup water
- 1⁄4 cup butter
- 2 tablespoons red wine vinegar
- 1 tablespoon sugar
- salt and pepper
- 1⁄2 cup red currant jelly
- Shred cabbage. Discard tough parts.
- Cook in butter, stirring for 3-4 minute.
- Add water, vinegar and sugar.
- Cover and simmer for 1 hours.
- Add jelly and salt and pepper to taste.
