"These tasty little morsels are similar to a pikelet or flapjack and a fantastic use for leftover rice. My 19 month old daughter likes these with cream cheese but they are also good with jam or honey. Would make a great healthy lunchbox treat too!"

directions

  • Mix together all ingredients except icing sugar & jam.
  • Fry tablespoons of the mixture in butter until lightly browned on one side then flip and cook other side.
  • Drain on absorbent paper.
  • Sprinkle with icing sugar & serve with jam.

  2. What a neat little recipe...and so tasty, too! I made exactly as the recipe calls for (used raisins) except I didn't dust with powdered sugar...we used honey and jam. Great way to use up leftover rice! *Aus/NZ Recipe Swap 10/07*
     
  3. These are yummy! My new favorite breakfast treat. I've made them twice as written- although I did toast my almonds. My favorite way to enjoy them is to spread with cream cheese, and drizzle them with honey. I can't stop eating them! Thanks Mandy- this one's a definite keeper. I also tried a variation that I liked *almost* as much. I left out the almonds, sweetened the mixture, and added some vanilla. Made this way they taste like my Granny's rice pudding!
     
  4. What a great use for leftover rice! I used a combination of dried fruits and added a shake of cinnamon and allspice. Served the jams and cream cheese. Thanks, Mandy!
     
  5. Very good way to use up leftover. (which I am always doing!) I did add a tad bit more flour.... but I always tend to use more flour in recipes like this since I am afraid there wont be enough "binder". I only had 1/2 cup of left over rice so I adjusted the rest of the recipe accoringly, except egg I left at 1. Left out the rasins and added some chocolate chips I had in the freezer. Excellent recipe!

  1. these were very good although they needed more flour to hold the mixture together, I used dried cranberries in place of the raisins, thanks for sharing this great recipe Mandy!

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
