Damama's Breakfast Casserole

This is a family favorite. I have 4 kids 2 are teen boys and this in gone with no left overs every time. I like to serve it with a small fruit salad.

  1. Preheat oven to 375.
  2. Wash potatoes and cook (all together) in microwave for about 4 mins (shouldn't be fully cooked), cool and slice. Sometimes I cool the night before and toss in the fridge just to make less work in the morning.
  3. cook sausage in a skillet and drain.
  4. In a casserole pan mix eggs, milk, 2 cups of the cheese, dash of sea salt and pepper, bacon and drained sausage.
  5. Top with sliced potatoes, remainder of cheese, and a sprinkle of paprika, sea salt and pepper.
  6. Bake until Eggs are set about 40 minutes but check after 30mins, or so.
