ingredients
- 354.88 ml red lentils, picked over and rinsed
- 14.79 ml vegetable oil
- 3 garlic cloves, minced
- 14.79 ml ginger, minced
- 1 large onion, diced
- 14.79 ml curry powder
- 946.36 ml vegetable stock or 946.36 ml chicken stock
- salt
- pepper
- 59.14 ml cilantro, chopped (optional)
directions
- Heat oil in a large saucepan over medium-low heat. Add onion and saute until almost tender, then add garlic and ginger, stirring until fragrant.
- Add curry powder and stir for one minute.
- Add lentils and stir, then add stock and bring to a boil.
- Reduce heat to lowest setting and simmer for 20 to 45 minutes, until lentils are very soft, adding more stock if necessary. Watch carefully and stir, so it doesn't burn on the bottom. Lentils should be mushy.
- Add salt and pepper and cilantro,if using, and enjoy.
- To serve as a soup add additional stock and other cooked vegetables such as peas and carrots. Cooked chicken may also be added.

I was born in a small Canadian prairie town but was raised in the city. Country living appeals to me more and more and now I think I have the best of both worlds, living just outside the city but within a 30 minute drive from downtown.
I enjoy the wildlife I see out my kitchen window and my vegetable and flower gardens in the summer. And I love cooking with the produce from my garden, although there always seems to be too much at once. Learning to can became a necessity with all those beautiful vegetables and I now really enjoy making pickles, relish, salsa, jams and whatever else strikes my fancy.
I have 2 teenage sons and cooking to suit everyone's taste is always a challenge. Recipezaar has certainly made life easier in that regard, with so many great recipes to choose from.
