I made these for a holiday party at a group home for autistic adults. The participants and the guests all loved them! They were a huge hit!!!

Ingredients Nutrition

  • 12 cup dairy-free margarine
  • 1 cup sugar
  • 1 12 teaspoons vanilla
  • 1 teaspoon baking powder
  • Egg Replacement for 2 eggs

  • 2 teaspoons baking soda, mixed with
  • 2 tablespoons vinegar, plus
  • 2 tablespoons water
  • Flour Substitute

  • 1 34 cups rice flour
  • 34 cup soy flour
  • cinnamon sugar for dipping the cookies

  • 14 cup sugar
  • 12 tablespoon cinnamon

Directions

  1. preheat oven to 350 degrees.
  2. cream margarine and sugar.
  3. add egg substitute and vanilla.
  4. in another bowl mix the flours and baking powder.
  5. add everything together to make dough.
  6. drop by 1/2 tbsp measure into cinnamon sugar.
  7. roll to coat.
  8. place on greased cookie sheet.
  9. bake 10-12 minutes.
