- 2 1⁄2 cups graham cracker crumbs
- 3 tablespoons sugar
- 3⁄4 cup melted butter
- 22 ounces cream cheese
- 1 cup sugar
- 3 large eggs
- 3 tablespoons fresh lemon juice
- 1 1⁄2 teaspoons vanilla
- 1⁄4 teaspoon salt
- 2 cups sour cream
directions
- Preheat oven to 350.
- Mix graham crackers, sugar and butter into large mixing bowl.
- Pack crust into spring form pan. Bake for 10 minutes.
- In a large mixing bowl, beat the cream cheese & sugar until very smooth (3 minutes).
- Add eggs, one at a time; beating after each addition until smooth. Be sure to scrape the sides of the bowl.
- Add lemon juice, vanilla, and salt. Beat until incorporated.
- Mix in sour cream until just blended. Pour batter into crust.
- Place a 9x13 pan with an inch of VERY hot water on the bottom shelf of the oven. Place cheesecake pan on the rack just above the water pan.
- Bake for 45 minutes. Turn off oven without opening the door. Let the cake cool for an hour.
- Remove cake from the oven and allow to cool on a rack until room temperature, about an hour.
- Cover with plastic wrap and refrigerate overnight.
