Dad's Oatmeal Coconut Cookies

"This recipe has always been known as Dad's cookies. So with Father's day coming up here a recipe to make for dad."

• Yields: 36 cookies
• Serves: 10

ingredients

• 1 cup shortening
• 1 cup brown sugar
• 1 cup white sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 1⁄2 cups flour
• 1 teaspoon salt
• 1 teaspoon baking soda
• 2 1⁄2 cups oatmeal
• 1 cup coconut

directions

1. Mix shortening and sugars add eggs and vanilla. Mix flour and spices then add to sugar mixture add in oatmeal and coconut. 350 degrees for 10 minutes. These will be a flat chewy cookie.

I placed my cookie dough on an ungreased baking sheet for 12 minutes. I think these are my new favorite cookie!! The shortening (I used Crisco sticks) make this cookie chewy. I loved these cookies. Made for PAC Fall 2008.
