MMMM GOOD! I'm always looking for easy recipes that use ingredients I usually have on hand. I don't have a blender but I used my hand mixer and this was so good and so easy. Didn't last long either!

This was a hit with hubby who is a custard pie fan. It's not typical custard but it's VERY good. Next time I'll blend it a bit longer to eliminate the texture of the coconut.

Does it get any easier than this! This produces a light textured - delicate tasting custard pie, enjoyed by children and adults alike. It was easy to cut and held it's shape when being served. I have made pies similar to this in the past, which tasted like sweet scrambled eggs... this is not that recipe. Thank you for the recipe.I will certainly make this again.
