The best chicken salad in the world. My favorite way to eat this is on a croissant, but it is great by itself or on any other type of bread too. Also I always go by taste on the curry powder, but the measurement is close.
- 2 chicken breasts
- 4 tablespoons mayonnaise
- 2 tablespoons plain nonfat yogurt
- 1 teaspoon curry powder
- 1⁄4 teaspoon salt
- 1 (15 ounce) can pineapple chunks
- 1⁄2 cup sliced almonds
- Poach chicken breasts in water (or chicken stock) for 15-17 minutes or until done. Cut into one inch cubes and chill.
- Blend ingredients to taste. You can make more of the sauce mixture if you desire.
