We just had this for lunch with toasted organic sourdough bread and enjoyed it very much thanks Loula. I tasted this and decided it was quite "warm" enough without adding any chilli powder (my curry powder already contains it). I gave it a rough blend, THEN added in the finely sliced scallions and reheated it all gently-this way they stayed nice and green. I served this with minted yoghurt and even if I had no yoghurt, I would serve this with mint as it really lifted the soup and gave it something extra.
We really enjoyed this soup. The only change was to use a leek in lieu of the scallions. The recipe made quite a bit more than 4 servings. The soup was served with cheese toast for a wonderful dinner. I look forward to leftovers throughout the week.
This is good. DD (toddler) loved it!!! I had to use canola oil because it's all I had! :| I used an extra garlic clove and Julie's Curry Powder Mix, which is a sweet curry powder. I added the spices to taste. I used a homemade vegetable stock for the vegetable broth.
This turned out really nice! I had one zucchini so quartered the recipe just for me. A very tasty soup! Thanks! Made for PRMR game.
Yummy in my tummy! There wasn't an ingredient in the recipe that I don't love. Perfect little soup that I'll be making a whole lot. I added the chili powder, but I don't really know how much as I was adding as I was tasting it. I didn't need more broth and the quantities were great for me. Thanks loula.
Loula this is a great recipe, although next tine I will not make it a 32dg day......lol I have frozen this as it was too hot (weather wise) too eat but had a small taste test and it was fantastic. The curry is not as overpowering as I thought, although no chilli was added....I am a chicken here!!!!! Great way to use up zucchini over the summer months, and freeze for those chilly winter nights. Thanks Loula, another way to use up my zucchini!
Hey loula, I think your soup is lovley we had it for lunch and it was a cold wet day and your soup went down a treat. I agree with you that it's not to overpowering, I did think it would be with 6 teaspoons of curry powder but my DH just loved it, he said it was very like mulligatawny he had had in a restaurant once, so I have been ordered to make it again soon the balance of flavours was just right thank's for a very nice recipe.
