Curried Tuna, Carrot & Hommus Couscous

  • Place couscous in a large heatproof bowl & stir in stock, add in curry powder, garlic & margarine and mix to combine.
  • Cover with plastic wrap & set aside for 5 mins or until all liquid has absorbed. Fluff with a fork to separate grains.
  • Add tuna to couscous with capsicum, carrot, rocket, onions & lemon juice, season to taste & stir well to combine.
  • Top each serve with a generous dollop of hommus.

  3. So good. I love it with the hummus. I cut everything down to 2 servings except for the veggies. Made a great lunch.
     
  4. Wow this was the BEST couscous I've ever had. The hummus absolutely makes the dish too. The only thing I did differently was omit the rocket after I discovered a dead grasshopper in the middle of my bunch (EWWW). I'll add it next time though, assuming no more insects are present lol. Thanks so much! Served with recipe #335368.

  1. What an awesome lunch! I used tuna with tomatoes and onions, rather than plain, and I subbed spinach for the rocket. This is great because it uses ingredients we always have on hand. I halved the recipe, and that still made 4 servings for us. Definite keeper!! Thanks Mandy!

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
