Didn't have any arugula or onion on hand, but still tasted very good. Served as a side for Asian-Style Grilled Tilapia (Asian-Style Grilled Tilapia).

So good. I love it with the hummus. I cut everything down to 2 servings except for the veggies. Made a great lunch.

Wow this was the BEST couscous I've ever had. The hummus absolutely makes the dish too. The only thing I did differently was omit the rocket after I discovered a dead grasshopper in the middle of my bunch (EWWW). I'll add it next time though, assuming no more insects are present lol. Thanks so much! Served with Indonesian Beef Sate.

What an awesome lunch! I used tuna with tomatoes and onions, rather than plain, and I subbed spinach for the rocket. This is great because it uses ingredients we always have on hand. I halved the recipe, and that still made 4 servings for us. Definite keeper!! Thanks Mandy!

I think this recipe was very good. I never had baby rocket so I used fresh spinach and it was very good. Thank you for the recipe :0)

We don't usually eat this kind of stuff in Texas, but hey I'm adventurous. This was good and healthy. I thought some red pepper hummus accented it nicely. I ate it as a meal since it has about everything in it you need. Thanks for posting Mandy.
