Curried Shrimp in Coconut Milk

  1. Put 1/2 the Cocoanut Milk in pan or Wok and bring to Boil.
  2. Stir in the Curry paste to Coconut Milk, simmer for approximately 10 minutes.
  3. Add the Fish Sauce, Salt, Sugar and remaining Cocoanut Milk and simmer for 5 minutes.
  4. Add the Shrimp and Cherry Tomatoes gently simmer until the Shrimp are pink and tender - about 5 minutes.
  5. Serve over Rice.
