this is one of the easiest main meal salads to prepare. serve with fresh asparagus and cold sliced tomatoes.
- 1 (8 ounce) box chicken rice pilaf mix
- 1 lb cold boiled peeled shrimp
- 3 green onions, sliced
- 1⁄2 chopped bell pepper
- 15 sliced green olives
- 2 (6 ounce) jars marinated artichoke hearts
- 1 1⁄2 cups mayonnaise
- 1⁄2 teaspoon curry
- prepare rice per directions on box; cool.
- mix mayo with 1/2 jar marinade from artichokes.
- combine above with all remaining ingredients& toss until well mixed.
- chill for at least 1 hour before serving on a bed of butter lettuce.
