A nice accompaniment to grilled chicken or whatever!

Ingredients Nutrition

  • 1 cup rice, cooked
  • 12 cup celery, chopped
  • 14 cup green onion, chopped (white and green part)
  • 14 cup red pepper, chopped
  • 2 tablespoons slivered almonds
  • 2 tablespoons raisins (optional)
  • dressing

  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • 12 teaspoon curry powder
  • 14 teaspoon turmeric
  • 18 teaspoon cumin
  • 18 teaspoon marjoram
  • 12 teaspoon garlic salt (adjust to taste)

Directions

  1. Mix first 5 (or 6) ingredients together.
  2. Combine dressing ingredients using a stick blender or your choice of device to emulsify ingredients.
  3. Gently stir dressing into rice mixture. Add water if it seems too dry. Adjust seasonings to taste.
