  • Heat butter in a saucepan. Add the onion and garlic. Cook, stirring, until soft. Add the remaining ingredients, except the chicken broth, stirring to coat grains.
  • Add the chicken broth. Cover. Bring to a boil. Reduce heat. Cook 15 to 20 minutes, until rice is tender. Remove the bay leaf and serve.

  1. Good stuff ! Ate with grilled curry seasoned chicken quarters. Would be good with a grilled chopped chicken breast on it too wrapped in a tortilla or pita - I will make some curry-mustard sauce to go with it next time around !

<p>I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston.
