Curried Quinoa Salad With Cranberries

You can only find quinoa in healthstores here. And not all quinoa products are (yet) available. But OK, when I found this recipe I was glad I could make it. Be sure to rinse the quinoa before boiling it. If you can't find quinoa you can use either couscous or bulgur.

  1. Rinse quinoa in plenty of water, drain.
  2. In medium saucepan, bring the two cups of water to a boil over high heat.
  3. Stir in quinoa.
  4. Reduce heat and simmer, uncovered, for 15 minutes or until water is absorbed.
  5. Remove from heat and let cool
  6. In small bowl, mix soy sauce, vinegar, honey, curry powder and red pepper flakes, stirring until completely blended
  7. Combine, in a serving bowl, remaining ingredients.
  8. Gently stir in cooled quinoa, then soy sauce mixture.


Most Helpful

This made a very nice lunch for me. I did toast the quinoa and then cooked it in veggie broth, as I believe that adds a lot of flavor to grains. I used only 1/3 of the soy sauce, and it was plenty salty for me. I do think that walnuts or some other nut would add to the flavor. Next time I would reduce the honey just a bit and add perhaps a bit more curry powder. A handful of cooked chickpeas added nutrition and made this more of an entree salad, and the chickpeas go well with the other ingredients.

This was great - we had a BBQ and this was a big hit. I had to replace cranberries w/ raisins and dried cherries and added cliantro. yum! thanks!

What a pleasing use of one of my favorite grains. The flavors on this dish really come together quite well. The curry flavor is very light, which worked well for my guests. I should mention that the salad was much better after sitting in the icebox for a few hours, and even better the next day. Well worth a little planning ahead. Thanks!
