My husband found this recipe online and we love its simplicity and big flavor! Wonderful served alongside rice and broccoli.
- 3 boneless skinless chicken breasts, chopped
- 1⁄4 cup butter, melted
- 1⁄2 cup honey
- 1⁄4 cup Dijon mustard
- 1 teaspoon salt
- 1 1⁄2 teaspoons garlic
- 1 1⁄2 teaspoons curry
- 1⁄2 onion, chopped thinly
- Chop chicken, set aside.
- Melt butter.
- add remaining ingredients, mix well.
- In a casserole dish combine chicken and sauce mixture.
- Bake for 40 minutes at 350'F, uncovered.
I made this for my room mate and some friends. It got eaten within minutes. I served it with saffron rice. It was super quick and easy to make too!
Love this!! I was looking for a new flavor with chicken and already had everything on hand for this. Very quick & very easy. Halved all ingredients as I only had 1lb. of chicken tenders & baked for 25 min @ 350 - smelled heavenly -13yo, 11yo, and 2yo boys couldn't get enough to eat- asked me to repeat soon! Served over jasmine rice with peas... next time I'll do broccoli as the chicken is sweet, yet tangy, and the peas didn't complement it well. Thanks so much Esquire!
