  • Cook onion in butter over moderate heat, stirring, for 4 minutes.
  • Add broccoli, stock and curry and season to taste.
  • Simmer mixture, covered, for 30 minutes.
  • Puree mixture in processor in batches, transferring it to a saucepan.
  • Add cream and heat over low heat.
  • Garnish with croutons or scallions.

  1. Not only is this soup delicious, it's also nutritious! I added a chopped potato to the vegetables, since my husband likes his soup on the thick side, and a little more curry powder, since 1 teaspoon didn't seem like very much. I zapped this soup with my stick blender, which made it super easy to puree, and it turned a beautiful pale green when I added the cream. We enjoyed this as a light starter to our dinner. We appreciate you Evelyn!
     
  2. Very easy to make. I loved the curry flavor. I used my stick (immersion) blender to puree. Next time I make this I think I will add a grated potato to help give a little more body to the soup without adding more fat. Delicious garnished with garlic/herb croutons! Thanx for sharing!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
