    This couscous salad is light and very simple to make. I like to serve it in the summer. It's perfect for picnics and barbecues.

    Directions:

      In a large microwave safe bowl mix couscous, boiling water, curry powder and olive oil.
    2. 2
      Cover bowl and heat in microwave on HIGH for 3 minutes.

      Fluff couscous with a fork and let it stand uncovered for 5 minutes.
    4. 4
      Fluff the couscous again with a fork.
    5. 5
      Add scallions, craisins and pine nuts to couscous and stir.
    6. 6
      Season with salt and pepper to taste.

      Very good. I substituted sunflower seeds for the pine nuts, which seemed to work just as well.

      This was good. My hubby turned up his nose when I told him there were craisins in it. He doesn't like dried fruit at all. But he really enjoyed the salad!

      I made this salad last week and loved it.I love spicy/fruity combination but I would add more craisins next time too. It's a keeper!
