Curried Chicken and Rice Salad

- 295.73 ml long grain rice
- 4.92 ml salt
- 709.77 ml water
- 2.46 ml minced fresh gingerroot
- 236.59 ml diced cooked chicken
- 236.59 ml cooked peas or 236.59 ml cooked green beans
- 118.29 ml chopped celery
- 59.14 ml sliced scallion
- 59.14 ml chopped parsley
- 118.29 ml chopped green pepper
- 118.29 ml raisins
- 295.73 ml mayonnaise
- 59.14 ml light cream
- 9.85 ml curry powder
- salad greens
- toasted peanuts
- toasted coconut
directions
- Combine rice, salt, water, and ginger in heavy saucepan. Bring to a boil, then stir with a fork. Cover, reduce heat, and simmer for about 15 minutes, or until the rice is tender and water is absorbed. Cool.
- Combine cooled rice, chicken, cooked and raw vegetables, and raisins.
- In a separate bowl, combine mayonnaise, cream, and curry powder; beat until blended. Pour over rice salad and mix very well. Chill.
- Serve in bowls lined with salad greens. Serve generously garnished with toasted peanuts and toasted coconut.

I was raised on southern cooking, but over the past few years, I have been looking for more healthy ways to eat. As a result, some of my recipes are healthy and some aren't.

<br>I am usually just cooking for myself, so I am especially interested in recipes that can be made for single servings or easily refrigerated/frozen for later.
<br>
<br>I am a teacher, and on weekends I try to make something that I can take for lunch the following week (something that won't be boring by Friday!) so that I can just grab it and go each weekday morning.
