Curried Chicken and Apple Sandwich

"This has gotten rave reviews at family picnics in the past. It is a refreshing change from the standard meat-salads used for sandwiches and is relatively easy to make. Pita pockets are the recommended "serving implement" but serve it up however you wish."

  • In a medium-size bowl, whisk together the mayonnaise, yogurt, curry powder, salt, ground red pepper, and garlic.
  • Stir in the chicken, green onions, green pepper, apple, and cilantro.
  • Tuck several lettuce leaves into each pita half, then stuff with the filling.
  • Cover with plastic food wrap and chill until ready to serve.
  • Will keep, refrigerated, for up to 2 days.

  2. I just love curried chicken salads, and this was a great variation. I used fat free yogurt, the chicken option, the red pepper option, and the cilantro. I omitted the salt (personal preference). Delicious! I served half in buns and half over spinach leaves and both methods were immensely enjoyed. Thanks for sharing! ZWT6
     
  3. I love the combination of the cilantro and the curry powder. I made 1/2 a recipe and it made 3 very generous servings. I also used only yogurt instead of mayo (a substitution I normally make.) I will be making this again :-) For ZWT6 N.
     
  4. This was a very dish. I actually did a bad job of following the recipe, I didn't have yogurt and used a few fresh chili peppers instead of the ground red pepper. I ended up not having apples either (so really, why did I bother, right?) so I added a pinch of sugar. It did the same thing, but was one less texture. This was such a great break from the normal mayo chicken salad! Thanks for posting!
     
  5. I'll start with a mea culpa! I didn't have yogurt, used dried garlic, didn't have green onions and used chopped onion. I added some lemon juice to my 1/2 cup of low fat mayo. So we can definitely say this recipe is flexible! This was very good!. I would like to try it with yogurt next time and the green onions but this was very yummy. ...Oh yes, served on wheat bread... Don't ya hate reviews like this?

  2. This is a very nice sandwich filling. I served it in small potato rolls for a bridal shower & received many compliments. I omitted the green onions, used parsley instead of (the evil) cilantro, & omitted the red pepper as I was apparantly out of the stuff. This would also be great served over lettuce, as a salad.

I grew up in PA Dutch country and now live in the suburbs of D.C. I am a homemaker and love to play with my kids who are now 9 and 6. My favorite room in the house is the kitchen. My children used to be explorative eaters... anything went. They are becoming more discriminating ... OK, picky ... so my newest challenge is finding interesting dishes that will meet their tastes. This usually means not admitting to specific ingredients or making them unnoticeable (such as onions). I'm loving the ability to practically pulverize my onions quickly with my food chopper. I love experimenting with different culinary traditions. When I find the time to play in the kitchen uninterrupted, dinner can be quite an adventure at our house. My ultimate month off would be to spend a month travelling around the world as a food critic. - send me back to St-Jean-De-Luz in SW France for Chipirones (a fabulous squid dish)along the bay!
