  1. Saute celery and onion in butter until crisp tender.
  2. Stir in apple.
  3. Cover and simmer 3 minutes.
  4. Sprinkle with flour, curry, salt and pepper.
  5. Cook and stir 2 minutes.

This was so good, and a different side dish with porkchops; I'm tossing out the applesauce!

I'm afraid I won't make this again. I also found it bland - apart from the raw kick of the curry powder. Finding the vegie/apple mixture very dry, I also omitted the flour and added only the curry powder and salt - still dry and not very tasty so added some moisture by way of 1/4 cup pure apple juice. This improved it a little but not enough to make this a dish I would have again.

I've made this several times with excellent results each time. This is a great vegetarian meal when thrown over some rice. Very tasty and savory and not at all spicy.
