My mom always made something similar using evaporated milk, but I almost like this more (sorry Mom).
- 1 cup light mayonnaise
- 1⁄4 cup sugar
- 1⁄4 cup vinegar
- 1⁄4 teaspoon salt
- 4 cups sliced cucumbers (I prefer seedless English cucumbers)
- In a bowl, combine mayonaisse, sugar, vinegar and salt by using a whisk (blend this well).
- Add cucumbers and stir to coat.
- Cover and refrigerate for 2 hours.
I am not a huge fan of raw cucumbers; when added to salads I pick them out...but, I also never had an English cucumber before! This has a milder taste and with the dressing they are very tasty! Made for I Recommend Tag.

Very simple, but cool and delicious. I usually put sliced onions in my cucumber salads, but I decided to go with the recipe as written, and I was very pleased. Thanx for sharing!
