This is a light and refreshing tasting salad or side dish. Quick and easy to make.
- 1⁄2 medium cucumber, peeled
- 1⁄3 cup mint leaf, chopped
- 1⁄3 cup sweet onion, chopped
- 1 cup nonfat plain yogurt
- salt, to taste
- Dice the cucumber.
- Add the mint, onion and yogurt.
- Stir well.
- Salt to taste.
We had this recipe as a side dish with Dry Potato Curry and Dhal and it was so delicious, so refreshing to the tongue. Such a lovely tang. The onion and the cucumber added a good contrast in texture to the smoothness of the yoghurt. A fantastic accompaniment to any curry dish. In fact, this dish will go down well with just about any dish e.g. rice dishes, casseroles, barbecues,and grills (broils). Great at a cookout. It was so easy to make and extremely quick with only 4 ingredients. You can't get much healthier that this dish. This recipe can be CELIAC FRIENDLY (people who cannot eat gluten products) if they choose plain yoghurt that is gluten free. Merlot, have you got any more great recipes like this? I thoroughly enjoyed this "salad". I actually find it as a nice snack between meals. It's quick and easy to make.
