Cucumber Tomato Salad

ingredients
- 1 large cucumber
- 1 beefsteak tomato
- 2 green onions
- salt & pepper (to taste)
- Italian salad dressing
directions
- Peel the cucumber. Dice into 1/4 inch cubes. Add to bowl.
- Slice the tomato and cut into 1/4 inch cubes. Add to bowl.
- Slice the green onions thinly. Add to bowl.
- Grind salt & pepper onto salad.
- Add a bit of Italian dressing.
- Toss to coat salad well.

I've whipped up something similar to this before. It makes a super-quick, healthy and colorful summer side dish. I think it's best to use homegrown fresh tomatoes and cukes for this. I at least doubled the amount of scallions and used light Italian dressing. This goes with anything from steak to burgers. Thanx!

The flavors are all there. Refreshing cucumber, juicy tomato and the savory onions. A great combination. The flavors of this salad will definately improve when the "real" tomatoes of summer are available. I think the trick of this simple recipe is to use a great homemade dressing or one that has been tried before. Some dressings just leave a lot to be desired. You might want to drain the salad before adding the dressing. Thanks for sharing your recipe. Very nice!!
