A basic staple for summer lunches.
- 1⁄2 English cucumber, chopped
- 2 tablespoons scallions, minced
- 1 teaspoon red wine vinegar
- 1 teaspoon lime juice
- 1 pinch raw sugar
- ground black pepper (to taste)
- Combine cucumber, scallions, vinegar, lime juice, and sugar in a bowl; toss well.
- Season with pepper.
