This is a little bit different with the addition of peanuts for extra crunch! From Cooking Light.
- 3 cups thinly sliced cucumbers, peeled and seeded
- 3 tablespoons rice vinegar
- 1 teaspoon sugar
- 2 teaspoons dark sesame oil
- 1⁄2 teaspoon salt
- 2 tablespoons chopped green onions
- 2 tablespoons chopped dry-roasted unsalted peanuts
- Combine first 5 ingredients in a medium bowl; toss to coat cucumber.
- Sprinkle with onions and peanuts before serving.
I love these marinated cucumbers! I make it and keep in refrigerator to use over the week!
I buy a one cucumber, slice it up, and make as directed, EXCEPT
I only add 1 tsp. sesame oil, and also add 1 Tbsp. of water so it isn't quite as tart.
I use the chopped peanut packets from McDonald's that come with their sundaes.
I mix these cukes in pasta salad, regular salad, eat alone, etc. Lots of uses!
Whoops! I've made this several times and even put it in my public cookbook of favorites but have not yet reviewed it! I don't think I have ever used the nuts or onions but I love the dressing. Today I made the full amount of dressing but only had about a cup of cuke (one cuke) so after marinating I dumped the whole thing over a bagged salad mix and tossed it together. Yum!
Great cucumber salad, we had it as a side with tonight's meal. It's light and can go with virtually anything. It would be especially good along-side an Asian dish or maybe a Thai curry. I made exactly as written only that I had to leave out the green onions (they would be great tho). I used a mandolin to get really thin slices, and that was probably my favourite part of this, lots of "area" to soak up the tasty dressing. Thanks, can't wait to make this again!
