I made this very simple salad tonight to share with my neighbor. He loved it...and...we both decided that the lemon juice and onions made our taste buds come alive! I made this recipe as posted with a few changes. I used half as much dill, I used nonfat sour cream and I added 1/2 c. frozen/thawed peas to make this salad a little bit sweeter. Loved this recipe not only for it's taste but how easy it is! It was especially easy with a mandolin. It literally took me five minutes to make. Everyone loved it and commented how fresh tasting it was and couldn't believe how little ingredients were needed for such a great salad. I will definitely make this again!
Yum!!! Love this recipe, so fresh and creamy but healthy!! It pairs great with steak - today I'll be trying it as a topping to a brat and this week with hummus and pita!

This was really good! Had some cucumbers to use up, so gave this recipe a try. Next time I will cut the cucumbers thinner so they absorb more of the flavor. Made this for company and everyone loved it!
I strayed a little from the recipe (I rarely ever do that). I did not use the sour cream because I am trying to diet. I brought this to a party where it was a huge hit! I might use a little less dill next time (though that may be masked when you use sour cream). But, it was very yummy and I am having it again for lunch today.
