I had this at Clarance's funeral. It was great a little different twist on creamed cucumbers.
- Peel cucumbers and grate on largest hole.
- Dice red onion.
- Mix onion and cucumber.
- Add salt and vinegar.
- Let soak 1/2 hour and then drain.
- Add dressing.
This is a lovely and unique way to serve cucumber salad. I used yellow onion (on hand) and for the dressing I used Ranch with some added Italian seasoning. Although I (still) prefer sliced cucumbers, this was a very unique treat that is company worthy. Thanks for sharing the recipe.
