Cucumber Salad

  • Slice cucumber very thinly (a mandolin is helpful).
  • Mix oil, honey and vinegar for the dressing and let sit 10 minutes. Mix together with cucumbers.

  1. I tried this yesterday and liked the garlic and honey, I never thought of that. I was a bit oily for me but I think I will try this again with a little less oil. Thanks for the recipe.
     
  2. This is a wonderful change, the honey really works in this recipe. I just tasted one of the leftover slices from last night, and it's still delicious; I can see how they would be a good addition to sandwiches, as suggested by another reviewer. With all the vinegars I keep around,I didn't have any white wine vinegar on hand, so I used white balsamic and cutback on the honey a bit to compensate for the sweetness; I think almost any vinegar would work in this, though, particularly rice wine vinegar. I used a little less oil, as well.

  4. I've prepared cucumbers in similar ways many times, but had never used honey--really enjoyed the flavor here and loved the inclusion of garlic. I don't believe this recipe should be thought of strictly as a "salad", though, as after the slices have marinated a bit, they are excellent on sandwiches. Thanks for posting!

I live in Ontario (Canada) and love to cook. I am doing my PhD right now and always am looking for a break from my studies. I like to read recipe books and experiment with new recipes. I love to cook anything ethnic and try to incorporate vegetarian meals into my diet at least twice a week. My ratings: 5 stars: I don't give out five stars easily - the dish has to be spectacular and something I would make again and again. 4 stars: A good dish that I might adapt a little but something that I would put into my recipe collection. 3 stars: I seem to give out a lot of these! These are dishes that are good but they are missing something or they don't live up to my expectations. I would not make them again simply because they aren't a favourite not necessarily because they were not good :) 2 stars: A dish that for some reason didn't work out or I just did not like it :) 1 star: I don't think I'll give any of these out!
