ingredients
- 2 cucumbers, peeled and sliced
- 44.37 ml oil
- 44.37 ml honey (or sugar)
- 44.37 ml white wine vinegar
- 1 garlic clove, minced
directions
- Slice cucumber very thinly (a mandolin is helpful).
- Mix oil, honey and vinegar for the dressing and let sit 10 minutes. Mix together with cucumbers.

This is a wonderful change, the honey really works in this recipe. I just tasted one of the leftover slices from last night, and it's still delicious; I can see how they would be a good addition to sandwiches, as suggested by another reviewer. With all the vinegars I keep around,I didn't have any white wine vinegar on hand, so I used white balsamic and cutback on the honey a bit to compensate for the sweetness; I think almost any vinegar would work in this, though, particularly rice wine vinegar. I used a little less oil, as well.

I've prepared cucumbers in similar ways many times, but had never used honey--really enjoyed the flavor here and loved the inclusion of garlic. I don't believe this recipe should be thought of strictly as a "salad", though, as after the slices have marinated a bit, they are excellent on sandwiches. Thanks for posting!

I seem to give out a lot of these! These are dishes that are good but they are missing something or they don't live up to my expectations. I would not make them again simply because they aren't a favourite not necessarily because they were not good :)
