This tangy cucumber salad is perfect to go with Mexican or middle eastern food. Warning: I've made this for a few years and I'm so used to making it that I don't measure things anymore, so the amounts are approximate.
- 1 cucumber
- 1 tablespoon olive oil
- 2 tablespoons vinegar
- 3 green onions, sliced
- 1 teaspoon lemon juice
- 1⁄4 teaspoon salt
- Cut cucumber in half lengthwise then slice.
- Mix all ingredients in a medium sized bowl.
- Serve immediately or refrigerate until serving.
