  • Peel, seed, and coarsely grate cucumber.
  • Roast cumin seeds in heavy skillet for about 5 minutes. Grind in spice grinder or with mortar and pestle.
  • Combine all ingredients and chill.
  • Garnish with fresh mint leaves.
