A perfect accompainment to either pappadums or a spicy curry
- 1⁄2 cucumber (diced)
- 1⁄2 teaspoon salt
- 1 pint natural yoghurt
- 2 spring onions (trimmed & sliced)
- 1 teaspoon ground cumin
- 1 teaspoon caster sugar
- 2 tablespoons lemon juice
- 2 tablespoons of fresh mint (chopped)
- Place the diced cucumber in a bowl and sprinkle with salt. Stir in the other ingredients and chill until ready to serve.
I made a half recipe of this. I grated my cucumber and used a low fat greek style yoghurt. I love the combination of flavours in this raita and will be making it again. It went especially well with a fish dish I made last night.
