A light side dish.
- 1 cucumber
- 1 tablespoon rice wine vinegar
- Using a swivel vegetable peeler, remove the skin from a large, straight cucumber.
- Then cut long, thin strips of flesh using the same peeler, like flat noodles.
- Mix in a bowl with seasoning and a light sprinkling of rice wine vinegar.
