  1. Peel cucumber and chop into 1/4-inch cubes.
  2. Combine all ingredients in bowl and mix.

A delicious and quick salad to serve with a spicy curry dish. The only change was to reduce it to serve 2. Something I will make again.

I used 2 cucumbers and 1/2 a red onion and honey instead of sugar. I thought it was really good but my husband thought it had a bit too much vinegar. I also made it about an hour ahead of time and kept in in the fridge until the rest of the meal. I will definately try this again but maybe try some other kind of vinegar next time.

Was looking for a great cucumber salad recipe to use up all the cucumbers and mint growing in my garden. This was great! I added some feta cheese that I saw in another recipe and it gave it just a bit more body and tang. Also substituted a mix of cider and balsamic vinegar for the white vinegar.
