A light greek inspired salad.
- 2 cucumbers, peeled and diced
- 1 cup of fresh mint, minced
- 1⁄2 cup fresh parsley, minced
- 1 teaspoon apple cider vinegar
- 2 teaspoons honey
- 1 tablespoon lemon juice
- Mix all ingredients together, serve chilled.
Wonderful! I just halved the amount of honey to suit our tastes as we don't like things too sweet and it was perfect. Served with warm poched salmon and new potatoes.
