This is the result of modifications I made to Sue L's recipeSueGreek Tomato Salad (Greek Tomato Salad). I limit the amount of tomatoes I eat so it's now a cucumber salad. Cooking time is marinading time.
- 3 cucumbers, chopped
- 1 red bell pepper, chopped
- 1⁄2 cup red onion, sliced very thin
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar (can use white balsamic)
- 1⁄2 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon oregano
- crumbled feta cheese
- Mix vinegars, oil, salt and oregano.
- Add vegetables and allow to marinade in the refrigerator for 3 to 4 hour.
