Blends well with grilled salmon!

Ingredients Nutrition

  1. Wash the cucumber(s) and partially remove the peel in lengthwise strips using a vegetable peeler or fork and leaving a little skin between each strip.
  2. Thinly slice the cucumber lengthwise. Place the vinegar, sugar, salt and pepper in a bowl and whisk until the sugar is dissolved.
  3. Add the cucumber, onion, and dill, toss well.
  4. The salad can be served at once, but it will improve in flavor if you let the ingredients marinate for 5 minutes.

Wonderful recipe. My mother would make this salad frequently, however she never measured anything. I'm happy to find a recipe that has quantities. Thanks. Excellent, cool crisp summer salad. I like to make it several hours ahard of time so the flavors can blend.

This is great! I have a "friend" who makes this salad and every time I ask how it is made (she just says that it's easy). So I was glad as well to find the recipie that will tell me how much of everything I will need. I tend to over do it when I try to recreate recipies on my own. Thanks

I love this. It's simple and tastes so good with the dill. A dallop of sour cream mixed in makes this version deliciously creamy, too.
