A light summery dish or side.
- 1 lb prepared seitan or 1 lb quorn pieces, brand chick'n tenders
- 1 large cucumber, peeled and diced
- 1 cup chopped spearmint, leaves
- 1 1⁄2 cups cooked couscous
- Mix ingredients together lightly.
- Refrigerate until chilled.
- If desired, serve in a tomato shell on a lettuce leaf and garnish with mint sprigs.
