- 396.89 g can chickpeas (rinsed and drained)
- 44.37 ml olive oil
- 29.58 ml red wine vinegar
- 9.85 ml oregano (fresh or 1 tsp. dried)
- fresh ground pepper
- 946.36 ml cucumbers (peeled and diced)
- 177.44 ml red bell pepper (chopped)
- 118.29 ml feta cheese (crumbled)
- 59.14 ml red onion (slivered)
- 59.16 ml black olives (chopped)
- 0.61 ml cayenne (optional)
directions
- Whisk, vinegar, oil,oregano and pepper in a large bowl until combined.
- Add cucumber,drained & rinsed chick peas,bell pepper, feta cheese, onion and olives,toss to coat.
- Refrigerate for at least 2 hours to allow veggies to meld.
