  1. Cut unpeeled cucumbers in half lengthwise; remove seed portion.
  2. Scoop out pulp; leave firm shells; chop pulp coarsely.
  3. Combine ham, cheese, and apples that have been tossed in lemon juice and salad dressing.
  4. Add cucumbers to ham mixture when ready to serve; mix well.
  5. Fill cucumber shells.
  6. Serve on lettuce leaf.
