Cucumber, Apple, and Mint Cooler

I processed all the ingredients EXCEPT for the chopped mint, then poured half of it into a glass for myself (I really don't usually care for mint)! Then I added 2 tablespoons of the chopped mint to the remaining liquid & blended that for my other half, who does like mint! Worked out just fine & both of us were satisfied! Ingredients Nutrition

  • 1 cup cucumber, chopped, peeled, and seeded (about 8 oz)
  • 13 cup frozen apple juice concentrate, unsweetened
  • 14 cup cold water
  • 14 cup of fresh mint, chopped
  • 10 ice cubes (about 4 oz)

Directions

  1. Place all ingredients in a blender and process until smooth (2 minutes).
  2. Serve immediately.
