You've done it again,Mirj!.Extra refreshing cold soup.I had herd about this soup but had never tried it,and first time I make it I got in love with it. I had no fresh herbs on hand so just added dry ones with excellent results. It's such a cool recipe , I'm not only having it for lunch as a soup but even drink it in a glass when thirsty!!!!Thanks Mirj, you never decieve me.
Delicious, healthy, and SO easy -- 5 stars all the way! Like Charishma, I just couldn't wait for it to chill, but it was fabulous right out of the food processor! (I still have some extra soup waiting in the fridge, which I can't wait to eat for lunch tomorro!) I'm QUITE a lemon fan, so I also added the lemon's zest to the soup. I was a little skeptical of the raw garlic at first too, but in fact I think it's the perfect compliment for the cucumbers and herbs... flavorful, but not overpowering at all. This is so very very nice and refreshing! I made just 1 serving of this for myself and had this for lunch this afternoon. What I really loved was the hint of lemon in this. Since I dont have fresh dill, I substituted it with French Marjoram(thanks to dear Uncle Miller who sent me a bottle of this wonderful herb that I really love!). I did omit the garlic since I'm not a very big garlic fan and I was wondering how it would taste uncooked. I preferred to leave it out and so I did. I did not add even a dash of salt. I felt it wasn't really required. The soup tasted delicious as it was. Since I was really hungry, I had this as soon as I pureed it in my blender. Next time(which is tomorrow!), I will chill this for many long hours before having it. I really enjoyed it and I'm going to add it to my recipe collection. Thank you so much for sharing an incredibly easy soup. The fact that it is good for health while tasting so good at the same time, really makes me glad I have tried it and loved it so much! You are a very special Mamma:)
This recipe was a helpful guide to what I wanted to make. The soup came out way too thick, so I added about 2 cups of water to get the consistency I wanted. I also added some salt, but not much at all. Thanks for the help!
VERY DELICIOUS!! Very fast and easy. I used to use my trusty old recipe for this soup, but I will be making this my only recipe.One of my husbands favorites and he loved this version!!!
