- 226.79 g thin-cut boneless pork chop
- 16 piece ham, cubes (3/4-inch)
- 16 piece swiss cheese, cubes (3/4-inch)
- 24 baby dill pickles

Cubano Rub
- 14.79 ml olive oil
- 4.92 ml finely grated orange zest
- 7.39 ml packed brown sugar
- 4.92 ml dry mustard
- 4.92 ml dried thyme or 4.92 ml oregano leaves
- 2.46 ml finely chopped garlic
- 2.46 ml salt
- 1.23 ml paprika (sweet)

Cilantro-Citrus Dip
- 59.14 ml mayonnaise
- 59.14 ml sour cream
- 14.79 ml finely chopped cilantro
- 14.79 ml spicy brown mustard
- 9.85 ml fresh lime juice
- 4.92 ml granulated sugar
- 2.46 ml finely grated orange zest
directions
- In small bowl, combine ingredients for rub. Spread on both sides of pork chops.
- Grill chops or broil 4 inches from heat source 3 to 5 minutes, turning once, until cooked through. Let stand 5 minutes. Cut into 8 1/2-inch strips.
- On each skewer, thread 1 ham cube, 1 cheese cube, 1 pickle, 1 strip roasted pork (skewered three times in an "s" shape), 1 pickle, 1 ham cube, 1 cheese cube and 1 pickle.
- For dip, combine all dip ingredients in small bowl. Serve along side kabobs. Makes 8 skewers.
