  • For the relish, in a small saucepan over medium heat, bring the onion and water to a boil.
  • Cook for 1 minute, stirring frequently; drain.
  • Transfer to a bowl; add roasted peppers, vinegar, garlic, oregano, salt, pepper and cumin.
  • Let stand at room temperature for 1 hour; remove and discard the garlic.
  • Cover and place in refrigerator.
  • To make the sandwiches, mash the minced garlic, cumin and salt.
  • Rub over the tenderloin; place in a shallow baking pan and bake uncovered at 425 degrees for 35-30 minutes or until a meat thermometer reads 160 degrees.
  • Allow to stand for 10 minutes; slice thin.
  • Over medium heat, heat the oil in a large skillet.
  • Top four slices of bread with pork, add the desired amount of relish and 2 slices of cheese; top with remaining bread.
  • Cook the sandwiches for 2 to 4 minutes on each side or until golden brown.
  • The yield is 4 sandwiches and 2 cups of relish.

  4. This is fabulous! A wonderful dinner for my family. I did roast my own red peppers but followed the recipe otherwise exactly. Thanks for allowing me to visit Cuba culinarily.
     
  5. Bravo! We really loved this sandwich! The tenderloin stands on its' own and we'll definitely be using it in our roast tenderloin rotation. The relish was outstanding. I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called. Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com. Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net. Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
